The Basics: Chicken

          Chicken. There are so many ways to use chicken that it would be easier to count the ways not to use chicken. You can bake it or grill it. You can bar-b-que it, saute it or use it in tacos. 
           One of my favorite things to do with it is grill it on my cast iron skillet on the stove top. This way I can have grilled chicken even if the weather is bad. The great thing about grilled chicken is that you can use it in many different dishes. I like to prepare it in large batches and use it throughout the week in different recipes.
           The easiest way to add flavor to chicken is to marinate it. If you don't have time to make your own marinades you can use different salad dressing depending on the flavor that you are going for. A good dressing to use is buttermilk ranch.


          All you need is a container or large Ziploc bag, your favorite dressing and the chicken.


          Coat the chicken in the dressing. Make sure to cover the chicken if using a container. Let sit in the refrigerator for at least 30 minutes to an hour. Place on pre-seasoned cast iron grill.


           Let chicken cook until it no longer sticks to grill. Flip and repeat on the other side.


You now have yummy and flavorful chicken. Eat up!

Earth Day: Local Event


For those of you local to the Piedmont/Triad area of North Carolina, the sixth annual Piedmont Earth Day Fair is being held at the Dixie Classic Fair grounds April 16, 2011. The gates will be open from 10am to 5pm with free parking and free admission. This is a great way to learn about sustainable living and it gets the kids involved. Check out the link for more info.
